If left unrefrigerated, it will evolve over time, developing more oxidative, nutty notes and less bright fruit. It will remain interesting and still reflective of the berries we love for up to 3 months.

C. CAssis is a great bar companion because a half ounce can brighten up everythng from a margarita to a gin martini.
Substitute C. Cassis for Campari or Aperol to create a brighter, more expressive spritz without the syrupy sweetness of traditional aperitifs or liqueurs.
Since C. Cassis is aromatized and wine-like, it fits in the red vermouth category. Here are some easy COCKTAILS TO USE C. CASSIS IN:

Achilles High Heel
1 oz. Gin
1 oz. Lillet Blanc
1 oz. C. Cassis
stirred and served up garnished with grappa soaked cranberry & mint
Cassis Negroni
1 oz. gin
1 oz. Forthave Red
½ oz. C. Cassis
½ oz. sweet vermouth
Build over ice, stir, strain, garnish with orange peel.
The Darla
2 oz. rum
1 oz. C. Cassis
½ oz. Current Dream syrup
(simple steeped with chamomile, star anise, black pepper)
½ oz. Amontillado Sherry
Juice of half lemon
Build over ice, stir, strain, garnish with lemon peel.
Blood Moon
1 ½ oz. Turmeric Rye
3/4 oz. C. Cassis
3/4 oz. Cherry Heering
3/4 oz. Blood Orange Juice
Serve over ice in rocks glass, garnish with blood orange slice.
Jamaican Periwinkle
1 oz. C. Cassis
.25 oz. Ver Jus
.25 oz. Simple Syrup
.25 oz. Doctor Bird Rum
.25 oz. Reposado Tequila
Stir with ice, Strain into coupe, top with cava. Garnish
with lemon peel
Kir Americano
1 oz. C. Cassis
1 oz. Acha Red Vermouth
Topped With Soda Water
Serve Over Ice in Collins Glass, Garnish with Orange Twist
